Bear claw
Super delicious almond bear claw!
A bear claw is a type of sweet pastry that is often enjoyed as a breakfast treat or dessert. Its name is derived from its shape, which resembles a bear's claw or paw. The bear claw typically consists of a yeast-based dough that is filled, shaped, and then baked to perfection.
The dough used for a bear claw is typically rich and buttery, resulting in a flaky and tender texture. It is leavened with yeast, allowing it to rise and develop a light, airy quality. The dough is rolled out into a rectangular shape and then spread or layered with a sweet filling.
The filling for our bear claw is a creamy almond paste and sliced almonds which adds a rich, nutty flavor. The filling is typically spread over the dough and then the pastry is carefully folded and shaped to resemble a claw or paw-like structure.
Once shaped, the bear claw is baked until it turns golden brown and develops a slightly crisp exterior. After baking, it is finished with a drizzle of icing and some sliced almonds, adding a touch of sweetness and enhancing its visual appeal.
The resulting bear claw is a delightful combination of flavors and textures. The buttery, flaky pastry pairs well with the sweet and nutty filling, creating a delicious treat that is best enjoyed with a hot cup of coffee or tea.
Bear claws are popular in various bakeries and pastry shops, and they are enjoyed by pastry lovers of all ages. Their distinctive shape and delectable taste make them a delightful indulgence for those craving a sweet and satisfying pastry experience.

Princess cake, also known as Prinsesstårta, is a traditional Swedish dessert that is both visually stunning and delicious. It is a layered cake with a dome-shaped design, typically covered in vibrant green marzipan, adorned with a decorative pink marzipan rose, and often dusted with powdered sugar.
The base of a princess cake is a sponge cake layer, which is typically infused with vanilla flavor. On top of the sponge cake, there are typically three layers of luscious fillings. A rich vanilla custard or pastry cream, providing a smooth and creamy texture on top of a spread of raspberry. The top layer is a fluffy whipped cream, which contributes a light and airy component to the cake.
Once the layers are assembled, the cake is covered in a dome of vibrant green marzipan, a sweet almond-based paste that is both pliable and slightly chewy. The marzipan is usually tinted green to resemble the color of a princess’ dress. It is carefully draped over the cake, giving it a smooth and elegant appearance. The finishing touch is a delicate marzipan rose placed on top, often colored pink, which adds a touch of whimsy and beauty to the cake’s presentation.
The princess cake is typically served chilled, allowing the flavors to meld together and the cream to set. When sliced, it reveals its distinct layers and invites you to indulge in its harmonious combination of flavors and textures. The cake offers a delightful balance of sweetness from the custard, fruitiness from the jam, and the lightness of the whipped cream. The marzipan covering adds a unique almond flavor and a touch of sweetness to the overall experience.

Strudel
Apple Original or Apple & Walnut.
Strudel is a traditional pastry that originated in Central Europe, with Austria being particularly renowned for its delicious apple strudel. It is a layered pastry with a thin, flaky dough that encases a flavorful filling. While apple strudel is the most well-known variety, other fillings such as cherry, apricot, or even savory options like spinach and cheese can be used.
The dough for strudel is typically made by stretching and rolling out a thin sheet of pastry dough. This dough is often made from flour, water, and a bit of oil or butter. The key to a good strudel dough lies in its ability to be stretched incredibly thin, resulting in delicate, paper-thin layers once baked.
The filling is the star of the strudel. In the case of apple strudel, it consists of thinly sliced apples combined with sugar, cinnamon, raisins and almond flour.
The filling is spread over the stretched dough, and the pastry is carefully rolled or folded to encase the filling, creating a long, cylindrical shape.
Once assembled, the strudel is typically brushed with melted butter or egg wash to promote browning and give it a lovely golden color when baked. It is then placed in the oven and baked until the pastry becomes crisp and flaky, while the filling inside softens and develops its flavors.
Strudel is often served warm, either on its own or accompanied by a dollop of whipped cream, vanilla sauce, or a scoop of ice cream. The contrast between the crispy, buttery layers of pastry and the tender, flavorful filling makes it a delightful dessert.
The popularity of strudel has spread beyond its European origins, and it is now enjoyed worldwide. Its versatility allows for a range of fillings, making it a versatile pastry for both sweet and savory variations. Strudel remains a beloved treat that celebrates the artistry of pastry making and the joy of indulging in a perfectly baked, layered delight.
